A delicious blend of tender flank steak, crunchy veggies, and rich toppings, perfect for summer nights or busy weeknights.

Ingredients

  • 1 lb flank steak
  • 1 bell pepper (red or green), sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Cooked rice or quinoa
  • Sour cream (for serving)
  • Salsa (for serving)
  • Avocado (for serving)
  • Chopped cilantro (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season steak with fajita seasoning, salt, and pepper.
  3. Sear the steak in the skillet for about 4-5 minutes per side or until desired doneness. Remove and let rest before slicing.
  4. Sauté sliced bell pepper and onion in the same skillet until slightly softened, about 5-7 minutes.
  5. Construct bowls with cooked rice or quinoa, topping with steak slices, sautéed vegetables, sour cream, salsa, avocado, and cilantro.

Notes

For a juicier steak, let it rest for at least 5 minutes after cooking before slicing. Feel free to swap vegetables based on availability.
