Delicious steak fajita bowls featuring marinated flank steak, vibrant bell peppers, and onions, served over rice or quinoa.

Ingredients

  • 1 lb flank steak
  • 2 bell peppers (red and green), sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooked rice or quinoa
  • Sour cream and cilantro for serving (optional)

Instructions

  1. Prepare the Marinade: In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  2. Marinate the Steak: Coat the flank steak with the marinade and let it rest for at least 30 minutes.
  3. Sear the Steak: Heat a skillet over medium-high heat and cook the steak for about 4-5 minutes on each side, or until cooked to your liking. Remove from heat and let it rest before slicing.
  4. Sauté the Vegetables: In the same skillet, add the sliced bell peppers and onion, cooking until tender.
  5. Assemble the Bowls: To serve, layer cooked rice or quinoa in bowls, top with sliced steak, sautéed vegetables, and garnish with sour cream and cilantro if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors meld beautifully over time.
