Creamy, cheesy egg bites that are easy to make and perfect for a delicious breakfast or brunch.

Ingredients

  • 6 large Eggs
  • 4 oz Cream cheese
  • 1 cup Gruyere cheese, shredded
  • 4 oz Goat cheese
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Spinach, chopped
  • Bacon (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Blend the eggs, cream cheese, salt, and pepper until smooth.
  3. Incorporate the Gruyere cheese, goat cheese, and any mix-ins.
  4. Prepare a muffin tin by greasing it lightly.
  5. Fill each muffin cup with the egg mixture, about three-quarters full.
  6. Bake for 25-30 minutes until set and slightly golden.
  7. Cool for a few minutes, then remove from the tin and serve warm.

Notes

These egg bites are great for meal prep and can be stored in the fridge for up to seven days.
