A warm and comforting split pea soup that brings back cherished memories.

Ingredients

  • 1 cup split peas
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse the split peas under cold running water, removing any dirt or debris. Once clean, set them aside to drain.
  2. Heat the olive oil in a large pot over medium heat until shimmering.
  3. Sauté the chopped onion, diced carrots, and celery for about 5-7 minutes, or until they soften.
  4. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  5. Incorporate the rinsed split peas, vegetable broth, and bay leaf into the pot.
  6. Bring the mixture to a boil, then reduce heat and let it simmer for about 1 hour.
  7. Season with salt and pepper to taste and blend if desired.
  8. Serve the soup warm, optionally topping with sautéed veggies.

Notes

For a smoky twist, add a splash of liquid smoke or diced smoked ham during sautéing. Store leftovers for up to 4 days or freeze for 3 months.
