A delicious dish that combines tender chicken, vibrant spinach, and luscious feta cheese, creating a satisfying and nutritious meal.

  • 4 chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C) to get it ready for the stuffed chicken.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted. This step only takes a few minutes! Once it’s done, remove from heat.
  4. In a bowl, mix together the crumbled feta cheese, softened cream cheese, sautéed spinach, oregano, salt, and pepper until well combined.
  5. Carefully cut a pocket into each chicken breast to hold the delicious filling.
  6. Generously fill each chicken breast with the spinach-feta mixture. If the filling is spilling out, secure the openings with toothpicks.
  7. Place the stuffed chicken in a baking dish. Season the outside with salt and pepper, then bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  8. Once out of the oven, let the chicken rest for a few minutes to retain its juiciness. Then it’s finally time to serve!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Wrap each stuffed breast tightly to freeze for up to 3 months.
