Ingredients
Scale
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon allspice
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 1/2 cups packed light brown sugar
1 cup vegetable or canola oil
1 cup buttermilk
1/2 cup applesauce
1/4 cup molasses
4 large eggs
8 ounces cream cheese, softened
5 tablespoons unsalted butter
3 cups sifted confectioners’ sugar
1 teaspoon vanilla extract
Salt to taste
Instructions
Preheat your oven to 350°F (175°C) to ensure it’s ready for your cake.
In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, allspice, cloves, and nutmeg. Set this fragrant mixture aside.
Combine the light brown sugar and vegetable oil in a large mixing bowl. Mix together until smooth and uniform.
Pour in the buttermilk and applesauce, mixing until fully integrated.
Add the eggs one at a time, blending well after each addition. Stir in the vanilla extract.
Slowly incorporate the dry ingredients into the wet mixture, mixing gently.
Pour the cake batter into a prepared baking pan and bake for 30-35 minutes, or until a toothpick comes out clean.
Let the cake cool in the pan for about 15 minutes, then transfer to a wire cooling rack to cool completely.
Beat the softened cream cheese and unsalted butter in a mixing bowl until light and fluffy.
Gradually add the sifted confectioners’ sugar and vanilla extract, mixing until smooth.
Once the cake is cooled, generously spread the cream cheese frosting over the top and sides.
Notes
Serve with vanilla ice cream or chai tea for a delightful pairing. Store leftovers in an airtight container.
