A vibrant wrap filled with seasoned chicken, fresh vegetables, and bursting with Southwest flavors.

Ingredients

Scale
  • 2 cups cooked chicken (shredded or diced)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper (to taste)
  • 4 large tortillas or wraps
  • 1 cup shredded lettuce
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1 cup black beans (drained and rinsed)
  • 1 ripe avocado (sliced or mashed)
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • Optional: shredded cheese, cilantro, lime wedges
  • Optional sauce: ranch, chipotle mayo, or salsa

Instructions

  1. Sauté the Chicken: In a hot skillet over medium heat, add the olive oil. Toss in your cooked chicken and season it generously with chili powder, cumin, paprika, and salt and pepper. Stir and cook for about 5 minutes until everything is heated through and aromatic.
  2. Prepare the Fresh Ingredients: While the chicken is cooking, wash and chop your fresh ingredients. Slice your avocado, dice your tomatoes and red onion, and get your lettuce and corn ready. This is where your wrap transforms into a colorful ensemble!
  3. Assemble the Wrap: Take a tortilla and lay it flat on a clean surface. Start layering your ingredients: a generous scoop of seasoned chicken, followed by shredded lettuce, corn, black beans, avocado, tomatoes, and red onion. Feel free to add a sprinkle of cheese and a handful of cilantro if you’d like!
  4. Wrap It Up: Fold in the sides of your tortilla and roll it from the bottom up, securing all the deliciousness inside. Give it a gentle squeeze to hold everything together, and voilà – you have your beautiful Southwest Chicken Wrap!

Notes

Serve with a side salad or chips. Best enjoyed fresh but can prepare ingredients ahead of time.
