  • 1 teaspoon lemon zest
  • 1/2 cup powdered sugar (for coating)
  • 1/4 cup cream cheese, softened (for hidden filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and granulated sugar until fluffy.
  4. Beat in the egg, lemon juice, and lemon zest until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Take a small amount of dough and flatten it in your palm to prepare for the cream filling.
  7. Place a small dollop of cream cheese in the center, then wrap the dough around it to form a ball.
  8. Roll the ball in powdered sugar to coat it completely.
  9. Repeat for all cookies and place them on the prepared baking sheet, spacing them apart.
