Deliciously simple Chewy Snickerdoodle Cookie Bars that capture the classic flavors of snickerdoodles in an easy-to-make format, perfect for gatherings.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract.
  4. Mix together the flour, baking soda, cream of tartar, salt, and ground cinnamon in another bowl.
  5. Combine the dry mixture into the wet ingredients, mixing just until fully incorporated.
  6. Spread the dough into the prepared baking pan, creating an even layer.
  7. Combine 1/4 cup of sugar with additional cinnamon and sprinkle over the dough.
  8. Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

These bars can be served warm with ice cream or paired with coffee. Store leftovers in an airtight container for up to 5 days.
