Delightful S’mores Cookie Bars capture the flavors of childhood with a chewy cookie base, chocolate, and marshmallows.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the graham cracker crumbs, flour, baking soda, and salt in a medium bowl until well blended.
  3. Cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Add the egg and vanilla extract, mixing well.
  5. Mix the dry ingredients into the wet mixture until combined into a thick dough.
  6. Spread half of the cookie dough evenly in the bottom of the prepared pan.
  7. Sprinkle the chocolate chips and mini marshmallows over the layer of dough.
  8. Top with spoonfuls of the remaining dough to cover as much of the chocolate and marshmallows as possible.
  9. Bake for 25-30 minutes or until golden brown.
  10. Cool completely before cutting into bars.

Notes

Store leftover cookie bars in an airtight container at room temperature for up to a week. They keep well in the fridge for two weeks.
