S’mores Cookie Bars blend chewy cookie goodness with nostalgic flavors of chocolate, graham crackers, and marshmallows, perfect for sharing or indulging.

Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • To taste Extra chocolate chips and marshmallows for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the two large eggs and vanilla extract to the creamed mixture, beating until well combined.
  4. Combine all-purpose flour, baking soda, and salt in a separate bowl. Gradually add this to the wet mixture, stirring until just combined.
  5. Fold in the graham cracker crumbs and chocolate chips into the dough.
  6. Transfer the cookie dough into the prepared baking dish and spread it evenly.
  7. Bake for 18-20 minutes until edges are golden and a toothpick comes out clean.
  8. Add mini marshmallows and extra chocolate chips on top, then return to the oven for 3-5 minutes until puffy and golden.
  9. Cool in the pan for 15 minutes, then use parchment overhang to lift out and cool completely on a wire rack. Slice into squares.

Notes

Serve warm or chilled, with milk, ice cream, or hot cocoa. Store leftovers in an airtight container for up to a week or freeze for up to 3 months.
