A savory and sweet smoked ham with caramelized onions, honey, and a hint of Dijon mustard, perfect for family gatherings and holidays.

  • 1 fully cooked ham (about 810 pounds)
  • 2 large sweet onions, sliced
  • 1 cup honey
  • 1/2 cup brown sugar
  • 1/4 cup Dijon mustard
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Apple or cherry wood chips (for smoking)

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Caramelize the sliced onions over medium heat until golden brown.
  3. Mix together honey, brown sugar, Dijon mustard, ground black pepper, garlic powder, and thyme in a bowl.
  4. Prepare the ham by scoring the surface in a diamond pattern and brushing half of the glaze over it.
  5. Smoke the ham with wood chips for 4-5 hours, basting with remaining glaze every hour.
  6. Top the ham with caramelized onions in the last hour of smoking.
  7. Check the internal temperature, and once it reaches 140°F (60°C), remove and let it rest for 15 minutes.
  8. Slice the ham and serve warm.

Notes

Store leftover ham in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
