  • 4 large egg yolks
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoons lemon zest
  • Salt and pepper to taste
  • Fresh dill, for garnish
  • Capers, for garnish
  • Fresh chives, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and slice the baguette into 1/2-inch slices. Lay them out on a baking sheet and toast until golden brown, approximately 10 minutes.
  2. Whisk together the egg yolks in a mixing bowl until smooth and silky.
  3. Combine the grated cheddar cheese and lemon zest into the egg yolks, adding a pinch of salt and pepper.
  4. Whip the mixture until creamy and fluffy, achieving a cloud-like consistency.
  5. Assemble the crostini by spreading the egg-cheddar mousse over the toasted baguette slices.
  6. Top each slice with pieces of smoked salmon, garnishing with capers, fresh dill, and chives.
