A comforting Slow Cooker Pot Roast that transforms humble ingredients into a rich, flavorful meal perfect for family gatherings.

Ingredients

Scale
  • 1 (3-4 lbs) beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a pan over medium-high heat. Brown the beef chuck roast on all sides until it’s golden and delicious, then remove from heat.
  2. In the slow cooker, place the chopped onion, carrots, and potatoes. This vibrant base will soak up all the wonderful flavors throughout cooking.
  3. Add the beautifully browned roast on top of the vegetables. It’s a presentation that’ll have your heart racing with anticipation!
  4. In a bowl, combine beef broth, Worcestershire sauce, minced garlic, thyme, salt, and pepper. Pour this flavorful mixture over the roast, letting it cascade over the vegetables beneath.
  5. Cover the slow cooker and cook on low for 8 hours, or until the meat is unbelievably tender. Trust me, your patience will be rewarded!
  6. Once cooked, use forks to shred the beef into delightful strands. Serve it with the vegetables and rich broth, and prepare for smiles around the table!

Notes

Browning the roast adds depth of flavor; don’t skip this step! For quicker prep, chop vegetables the night before and store them in the fridge.
