  • 34 pounds beef chuck roast
  • 4 carrots, cut into large chunks
  • 3 potatoes, cut into large chunks
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh thyme (optional)
  • Bay leaves (optional)

Instructions

  1. Season the meat generously with salt and pepper.
  2. Brown the roast on all sides in a large skillet over medium-high heat.
  3. Transfer the browned roast to your slow cooker.
  4. Add the chunks of carrots, potatoes, and quartered onion around the roast.
  5. Mix the beef broth and Worcestershire sauce together, then pour over the roast and vegetables.
  6. Add optional sprigs of thyme and bay leaves for extra flavor.
  7. Cover and cook on low for 8-10 hours or on high for 4-6 hours.
  8. Remove the roast and vegetables from the slow cooker and let rest for a few minutes before slicing.
