A simplified version of the traditional barbacoa beef recipe cooked in a slow cooker, delivering rich flavors and tender meat perfect for tacos and burritos.

Ingredients

  • 2 pounds beef chuck roast
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 chipotle peppers in adobo sauce
  • 1 cup beef broth
  • 1 onion, diced

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Mix the lime juice, apple cider vinegar, minced garlic, cumin, oregano, salt, black pepper, chipotle peppers, and beef broth in a bowl.
  3. Pour the marinade mixture over the beef, adding the diced onion on top.
  4. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  5. Shred the beef with two forks and mix it with the sauce.
  6. Serve in tacos, burritos, or over rice for a satisfying meal!
