A vibrant dish of shrimp, fresh slaw, and warm tortillas that brings the essence of summer to your dinner table.

  • 1 lb shrimp, peeled and deveined
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • 1 cup cabbage, shredded
  • ½ cup mayonnaise
  • 2 tablespoons lime juice
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix the chili powder, cumin, salt, and pepper. Toss the shrimp in the spice mixture, ensuring they are well-coated.
  2. Heat the olive oil in a skillet over medium heat. Once hot, add the shrimp and cook for about 2-3 minutes on each side until they are opaque and cooked through.
  3. In another bowl, mix the mayonnaise and lime juice to create a creamy slaw.
  4. Warm the corn tortillas in a separate pan over low heat.
  5. Assemble the tacos by placing a generous portion of spicy shrimp on each tortilla, topping with the creamy slaw and fresh cilantro.
  6. Serve with lime wedges on the side.

Notes

Store leftovers in airtight containers, with shrimp and tortillas separate. Best enjoyed fresh.
