Vibrant shrimp tacos with a zesty lime twist, perfect for summer evenings.

Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Seasoning the shrimp: In a bowl, toss shrimp with olive oil, chili powder, cumin, salt, and pepper until they are fully coated in the spices. Let them sit for a moment to absorb those savory flavors.
  2. Sautéing the shrimp: Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for 2-3 minutes on each side until they turn pink and opaque.
  3. Warming the tortillas: In a separate skillet, warm the corn tortillas for about 30 seconds on each side until they become pliable and slightly toasted.
  4. Assembling the tacos: Take a warm tortilla and place a generous portion of shrimp in the center. Top with shredded cabbage, diced tomatoes, and fresh cilantro.
  5. Finishing touches: Serve your finished tacos with lime wedges on the side.

Notes

If you find yourself with leftover shrimp, they can be stored in an airtight container in the refrigerator for up to two days. Reheat gently in a skillet. Consider adding sliced jalapeños for a spicy kick.
