A vibrant dish combining classic shrimp scampi flavors with fresh spiralized zucchini noodles.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized into noodles (zoodles)
  • 4 cloves garlic, minced
  • 1/4 cup white wine (or chicken broth)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet. Cook for 2-3 minutes on each side until they turn pink and are fully cooked.
  3. Pour in the white wine (or chicken broth) and drizzle with lemon juice. Let the mixture simmer for a couple of minutes.
  4. Add the spiralized zucchini noodles to the skillet, tossing everything together. Cook for an additional 2-3 minutes until the zoodles are tender but still have a slight bite.
  5. Season with salt and pepper to taste. Remove from heat, and garnish with fresh parsley before serving.

Notes

For added flavor, consider including cherry tomatoes, spinach, or mushrooms. Zucchini noodles should remain slightly crunchy.
