A delightful Japanese dessert featuring chewy mochi filled with rich white chocolate, perfect for tea time.

Ingredients

  • 1 cup rice flour
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cup white chocolate
  • 1/4 cup cornstarch (for dusting)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the mochi by mixing rice flour, sugar, and water in a bowl until smooth. Transfer this mixture into a saucepan and cook over medium heat, stirring constantly until it thickens and turns translucent.
  2. Allow the mochi to cool slightly in the pan for about 10 minutes on a cornstarch-dusted surface.
  3. Cut the mochi into small rounds using a cookie cutter or knife.
  4. Melt the white chocolate in a microwave-safe bowl, heating in short bursts, stirring until smooth. Let it cool slightly.
  5. Take a piece of mochi and place a small spoonful of white chocolate in the center. Fold the mochi over the filling and pinch the edges to seal it tightly.
  6. Dust the finished treats with cornstarch to prevent sticking and serve with warm tea or coffee.

Notes

Keep hands and working surfaces lightly dusted with cornstarch to prevent sticking. Store in an airtight container at room temperature for up to 3 days.
