A quick and nutritious sheet pan meal featuring roasted salmon and asparagus, perfect for busy weeknights.

Ingredients

Scale
  • 4 salmon fillets
  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) to get it nice and hot for roasting.
  2. Place the salmon fillets and asparagus on a large sheet pan, creating a vibrant canvas of color.
  3. Drizzle the olive oil over the salmon and asparagus, giving everything a good sheen and ensuring it doesn’t stick to the pan.
  4. Sprinkle minced garlic, salt, and pepper over the salmon and asparagus, infusing every bite with flavor.
  5. Place lemon slices on top of the salmon, allowing their bright acidity to meld beautifully during cooking.
  6. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork – it should be tender and succulent.
  7. Remove from the oven and garnish with fresh dill or parsley if desired. Serve hot and enjoy the satisfaction of a job well done!

Notes

For crispy asparagus, avoid overcrowding the pan. Feel free to substitute asparagus with green beans or broccoli.
