A vibrant and comforting dish made with eggs poached in a spiced tomato sauce, perfect for brunch or dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced (red, green, or yellow)
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and bell pepper, sauté until soft, about 5 minutes.
  3. Stir in minced garlic, cooking for another minute.
  4. Add canned tomatoes, cumin, paprika, salt, and pepper; stir to combine and simmer for 10 minutes.
  5. Create small wells in the sauce, and crack eggs into each well.
  6. Cover the skillet and cook until eggs are set to your liking, about 5-7 minutes.
  7. Garnish with chopped parsley and serve.

Notes

Pairs well with crusty bread for soaking up the sauce. Leftovers can be stored for up to 3 days in the fridge.
