A comforting dish of marinated chicken with a sweet and savory glaze, served over fluffy rice with vibrant vegetables.

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • Sesame seeds, for garnish
  • Green onions, for garnish

Instructions

  1. Mix the Marinade: In a bowl, combine the sesame oil, soy sauce, honey, rice vinegar, minced garlic, and ginger. Stir until smooth to create a flavorful marinade.
  2. Marinate the Chicken: Add the diced chicken to the marinade, ensuring each piece is well coated. Let it sit for at least 30 minutes, allowing the flavors to infuse into the chicken.
  3. Cook the Chicken: Heat a skillet over medium heat. Add the marinated chicken, cooking until it’s golden brown and cooked through, about 7-10 minutes.
  4. Steam the Vegetables: While the chicken cooks, steam the broccoli and carrots until they are tender yet still vibrant in color, about 5 minutes.
  5. Serve the Chicken Bowls: Place a scoop of cooked rice in each bowl, top with chicken and steamed veggies, and garnish with sesame seeds and chopped green onions.

Notes

Allow the chicken to marinate for at least 30 minutes for the best flavor. Feel free to substitute vegetables as desired.
