  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • Filling of choice (e.g., sautéed mushrooms, spinach, cheese, ham)

Instructions

  1. Whisk together the flour and eggs in a mixing bowl until well combined. Gradually add the milk, stirring to combine. Add salt and melted butter, mixing until smooth.
  2. Heat a non-stick skillet over medium heat. Pour a small amount of the batter and swirl to coat the pan evenly. Cook for 1-2 minutes until the edges lift and turn golden.
  3. Using a spatula, flip the crepe and cook for another minute until cooked through with a lovely golden color.
  4. Remove the crepe from the skillet and repeat with the remaining batter. Fill each crepe with your desired filling, fold nicely, and serve warm!

Notes
