Delicious and healthy Salmon Grain Bowls featuring flaky salmon, fluffy quinoa, and fresh vegetables, perfect for a nourishing meal.

  • 2 cups cooked quinoa
  • 2 salmon fillets
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or dill) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) to prepare for baking the salmon to perfection.
  2. Place salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 12-15 minutes until cooked through, flaky and beautifully golden.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, avocado, and red onion. Toss gently to mix the ingredients thoroughly.
  4. Drizzle the mixture with lemon juice, adding a bright flavor that beautifully complements the richness of the salmon. Toss gently once more to combine.
  5. Serve the quinoa mixture in bowls, topped with the fragrant baked salmon. Garnish with fresh herbs, adding a touch of green and inviting aroma.

Notes

Leftover Salmon Grain Bowls can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm the quinoa mixture gently in the microwave and place the salmon on top just until warmed through.
