  • 1/4 cup nuts (e.g., walnuts or pecans)
  • Balsamic vinaigrette or your choice of dressing

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper until evenly coated. Spread them out on a baking sheet in a single layer.
  3. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, turning halfway through for even cooking.
