A vibrant and flavorful side dish featuring roasted rainbow carrots, perfect for any meal.

  • 1 lb Rainbow Carrots
  • 2 tbsp Olive Oil
  • 1 tsp Fresh Rosemary, chopped
  • 1 tsp Fresh Thyme, chopped
  • 1 tbsp Fresh Parsley, chopped
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the carrots by washing, peeling, and cutting them into uniform pieces, about 1-2 inches long.
  3. Combine the carrots with olive oil, rosemary, thyme, parsley, salt, and pepper in a large mixing bowl.
  4. Arrange the carrots on a rimmed baking sheet in a single layer.
  5. Roast for 20-25 minutes, stirring halfway through for even browning.
  6. Serve the carrots warm, drizzled with extra olive oil and sprinkled with flaky sea salt.

Notes

For even cooking, ensure carrot pieces are roughly the same size. Feel free to use regular carrots if rainbow carrots aren’t available.
