A simple yet profound dish—roasted chicken that embodies comfort food with crispy skin and tender, juicy meat.

Ingredients

  • 1 whole chicken
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, cut into quarters
  • 4 garlic cloves, crushed
  • Fresh herbs (such as rosemary or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rub the whole chicken with olive oil, ensuring it’s covered evenly. Season generously with salt and pepper.
  3. Stuff the lemon quarters, crushed garlic, and fresh herbs into the cavity of the chicken.
  4. Place the prepared chicken in a roasting pan and roast for about 1.5 hours, until the internal temperature reaches 165°F (74°C).
  5. Remove the chicken from the oven and let it rest for 10-15 minutes.
  6. Carve the chicken and serve it with the drippings from the pan.
