A vibrant dish that celebrates the bounty of nature, featuring tender asparagus and caramelized carrots infused with garlic and thyme.

  • 1 bunch asparagus, woody ends trimmed
  • 4 large carrots, peeled and sliced into sticks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the woody ends off the asparagus, and peel and cut the carrots into sticks.
  3. Toss the asparagus and carrots with olive oil, garlic, thyme, salt, and pepper.
  4. Spread the seasoned vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for about 20 minutes, stirring halfway.
  6. Garnish with grated Parmesan cheese before serving, if desired.

Notes

For best results, ensure vegetables are cut evenly and avoid overcrowding the baking sheet.
