A delightful and comforting rhubarb crumble that celebrates the sweetness of spring and family traditions.

Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the chopped rhubarb, granulated sugar, cornstarch, and vanilla extract in a mixing bowl.
  3. Spread the rhubarb mixture evenly in a greased baking dish.
  4. Mix the all-purpose flour, rolled oats, brown sugar, cinnamon, and salt in another bowl.
  5. Add the softened unsalted butter to the dry ingredients and cut it in until the mixture resembles coarse crumbs.
  6. Sprinkle the crumble mixture generously over the rhubarb layer.
  7. Bake in your preheated oven for 40-45 minutes, or until the topping is golden brown and bubbling.
  8. Serve warm, optionally with a scoop of vanilla ice cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 3 months.
