A delightful combination of sweet and tart rhubarb topped with a crunchy, buttery oat crisp, perfect for summer picnics or warming comfort food.

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the chopped rhubarb and granulated sugar in a bowl, ensuring the rhubarb is well-coated.
  3. Mix the flour, oats, cinnamon, and brown sugar in another bowl.
  4. Stir in the melted butter until well combined.
  5. Sprinkle the oat mixture evenly over the rhubarb.
  6. Bake for about 30-35 minutes, or until the top is golden brown and crisp.
  7. Serve warm, optionally with a scoop of ice cream.

Notes

This crisp can be made using frozen rhubarb without thawing. Adjust sugar to taste for desired tartness.
