A labor of love dish featuring tender beef short ribs braised in a rich red wine sauce, perfect for cozy gatherings.

Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 4 cups beef broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat your Dutch oven over medium-high heat and add olive oil.
  2. Season the short ribs with salt and pepper, then brown them in batches until golden brown on all sides. Remove and set aside.
  3. In the same pot, add onion, carrots, and celery; sauté until softened.
  4. Stir in garlic and cook for an additional minute.
  5. Pour in the red wine, scraping up any browned bits from the bottom.
  6. Return the short ribs to the pot, add beef broth, thyme, and bay leaf.
  7. Bring to a simmer, then cover and transfer to a preheated oven at 325°F (163°C).
  8. Cook for 3-4 hours until the ribs are tender and falling off the bone.
  9. Serve hot with sauce over the ribs.

Notes

Let the dish rest for a few minutes after cooking to meld flavors. Pair with mashed potatoes or polenta.
