Delightful Red Velvet Cupcakes topped with creamy cream cheese frosting for a rich, decadent treat.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl until combined.
  3. Mix the oil, buttermilk, eggs, food coloring, vanilla, and vinegar in another bowl until smooth.
  4. Combine the wet ingredients with the dry ingredients, mixing until just combined.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for 20-22 minutes, or until a toothpick comes out clean. Allow to cool.
  7. Make the frosting by beating cream cheese and butter until smooth, then gradually adding powdered sugar and vanilla.
  8. Frost the cooled cupcakes and enjoy!

Notes

Store in an airtight container in the fridge for up to 5 days, or freeze (without frosting) for up to 3 months.
