A delightful blend of sweet and tart, this raspberry sorbet is a refreshing escape from the heat with just four simple ingredients.

Ingredients

  • 2 cups fresh raspberries
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice

Instructions

  1. Combine the sugar and water in a saucepan over medium heat, stirring until the sugar fully dissolves.
  2. Add the fresh raspberries and lemon juice to the syrup and bring to a boil.
  3. Reduce the heat and let the mixture simmer for about 5 minutes until the raspberries soften.
  4. Remove from heat and let the mixture cool slightly.
  5. Blend the raspberry mixture until smooth, then strain it through a fine-mesh sieve to remove seeds.
  6. Chill the strained mixture in the refrigerator for at least 2 hours.
  7. Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions.
  8. Transfer the sorbet to a container and freeze until firm.

Notes

Serve with chocolate sauce or fresh berries. Store leftovers in an airtight container in the freezer for up to two weeks.
