A sweet and tangy dessert featuring a buttery crust topped with a refreshing lemon filling and fresh raspberries.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh raspberries
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper for easy removal.
  2. Mix flour and powdered sugar until well combined. Cut in softened butter until the mixture resembles coarse crumbs. Press this crumbly mixture into the bottom of the prepared pan to form a crust.
  3. Place the pan in the preheated oven and bake for 15 minutes until the crust is lightly golden.
  4. Whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt until the mixture is smooth and creamy.
  5. Fold in the fresh raspberries gently so they retain their shape.
  6. Pour the lemony raspberry filling over the baked crust, spreading it out evenly. Return to the oven and bake for an additional 20-25 minutes, or until set.
  7. Remove from the oven and let the bars cool completely in the pan. Dust the top generously with powdered sugar and cut into squares.

Notes

These bars can be served with vanilla ice cream or whipped cream and pairs well with iced tea or lemonade.
