Deliciously easy Raspberry Crumb Bars with a buttery oat topping and a vibrant raspberry filling, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh or frozen raspberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Mix together the flour, old-fashioned oats, brown sugar, and salt. Stir in the melted butter until crumbly.
  3. Press half of the crumbly mixture into the bottom of the prepared baking dish.
  4. Combine the raspberries with lemon juice, cornstarch, and granulated sugar. Stir gently and spread over the crust.
  5. Crumble the remaining oat mixture over the raspberry layer.
  6. Bake in the preheated oven for 30-35 minutes until golden brown.
  7. Cool completely in the dish before cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week. Can freeze for up to 3 months.
