Delicious Raspberry Cheesecake Bars with a buttery graham cracker crust and creamy filling, perfect for any occasion.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup fresh raspberries
  • ¼ cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine graham cracker crumbs, melted butter, and granulated sugar in a medium bowl. Press the mixture into the bottom of the prepared baking pan to form a sturdy crust.
  3. Beat the cream cheese in a large mixing bowl until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition to ensure a smooth texture.
  5. Fold in the fresh raspberries and raspberry jam, taking care not to break the raspberries too much.
  6. Pour the cheesecake filling over the prepared crust in the baking pan, smoothing the top with a spatula.
  7. Bake for 30-35 minutes or until the center is set.
  8. Cool completely before refrigerating for at least 2 hours to solidify.
  9. Slice into bars and serve to delight your guests or family.

Notes

These bars keep well in the refrigerator for up to a week. For longer storage, you can freeze them for up to 3 months.
