Delicious thick corn tortillas filled with cheese and beans, embodying comfort and tradition in every bite.

Ingredients

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1 cup cheese (mozzarella or queso blanco)
  • 1/2 cup refried beans
  • 1/4 cup chicharrón (fried pork, optional)
  • Salt to taste

Instructions

  1. Combine the Dough: In a bowl, mix masa harina with salt, gradually adding warm water while kneading until smooth.
  2. Shape the Dough Balls: Roll small portions into golf ball-sized balls.
  3. Flatten the Balls into Discs: Gently flatten each ball into a disc about 1/4 inch thick.
  4. Stuff with Filling: Add cheese, refried beans, and chicharrón in the center of each disc.
  5. Seal the Pupusas: Fold and pinch the edges to create sealed pockets.
  6. Cook to Perfection: Heat a skillet, and cook each Pupusa for 2-3 minutes on each side until golden brown.
  7. Serve with Joy: Enjoy warm, paired with curtido and salsa.

Notes

These Pupusas are best enjoyed fresh, but can be stored in the fridge for 2-3 days or frozen for future meals.
