Delightful and soft pumpkin cookies infused with the flavors of cinnamon and nutmeg, perfect for fall.

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the pumpkin puree, sugar, and softened butter until smooth.
  3. Beat in the egg and vanilla extract.
  4. Combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  5. Add the dry ingredients to the pumpkin mixture and mix until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Allow to cool on the baking sheet before transferring to a wire rack.
