A moist and spiced pumpkin bread that captures the essence of autumn, perfect for breakfast or an afternoon snack.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. Combine the pumpkin puree, sugar, and vegetable oil. Mix in the eggs until smooth.
  3. Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  4. Incorporate the dry mixture into the pumpkin mixture until just combined. Stir in chopped walnuts if using.
  5. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with cream cheese or butter. Pairs well with spiced chai or coffee.
