A simple yet delightful recipe for marinated pork skewers grilled to perfection, embodying the essence of Mediterranean cooking.

Ingredients

Scale
  • 1 pound pork tenderloin, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Mix the Marinade: In a bowl, combine olive oil, red wine vinegar, lemon juice, oregano, garlic, salt, and pepper.
  2. Marinade the Pork: Add the pork pieces to the marinade, cover, and refrigerate for at least 1 hour or overnight for best flavor.
  3. Prepare the Grill: Preheat the grill to medium-high heat.
  4. Skewer the Pork: Thread the marinated pork onto skewers.
  5. Grill the Souvlaki: Grill the skewers for about 10-15 minutes, turning occasionally, until the pork is cooked through and slightly charred.
  6. Plate and Serve: Serve with pita bread, tzatziki sauce, and fresh vegetables.

Notes

For more intense flavor, marinate the pork overnight. Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
