Ingredients

  • 2 pounds pork shoulder
  • 1 orange, juiced
  • 1 lime, juiced
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • Water

Instructions

  1. Combine the pork shoulder, orange juice, lime juice, onion, garlic, cumin, oregano, bay leaves, salt, and pepper in a slow cooker.
  2. Pour enough water into the slow cooker to cover the pork completely.
  3. Cover and cook on low for about 8 hours, or until the pork is fork-tender.
  4. Remove the pork from the slow cooker and shred using two forks, then return the shredded pork to absorb the juices.
  5. Spread the shredded pork on a baking sheet and broil for 5-10 minutes until crispy.

Notes

Serve in warm tortillas with diced onions, fresh cilantro, and lime for added flavor. Leftovers can be stored in the fridge for up to 4 days or frozen for 3 months.
