A succulent, herb-infused pork roast with crispy skin, perfect for family gatherings.

Ingredients

  • 1 boneless pork loin
  • 3 tablespoons fennel seeds
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh sage, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Crispy pork skin (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the fennel seeds in a pan over medium heat until fragrant, then grind coarsely.
  3. Combine the ground fennel, rosemary, sage, garlic, salt, and pepper in a bowl.
  4. Rub the herb mixture generously over the pork loin.
  5. Roll the pork tightly and secure it with kitchen twine.
  6. Sear the pork in heated olive oil until browned on all sides.
  7. Transfer the pork to the oven and roast for 1.5 to 2 hours until the internal temperature reaches 145°F (63°C).
  8. Rest for 15 minutes before slicing and serving.
