A warm and comforting dish that combines the flavors of pizza with the heartiness of a pot pie, perfect for chilly evenings.

  • 1 large pizza dough (store-bought or homemade)
  • 2 1/4 teaspoons Yeast
  • 2 teaspoons Sugar (Divided into 1 teaspoon for yeast activation and 1 teaspoon for dough)
  • 1 1/4 cups Water (At 115°F)
  • 2 tablespoons Olive Oil
  • 3 cups All-Purpose Flour
  • 1 teaspoon Salt
  • 1 cup Pizza Sauce (Divided)
  • 8 slices low-moisture Mozzarella Cheese (cut into halves)
  • 4 slices Provolone Cheese
  • Additional Pizza Toppings (As desired, cooked if necessary)
  • Baking spray (For ramekins)

Instructions

  1. Activate the Yeast: In a small bowl, mix together the warm water, yeast, and 1 teaspoon of sugar. Allow it to sit for about 5 to 10 minutes, or until it becomes frothy.
  2. Mix the Dough Ingredients: In a large mixing bowl, combine the all-purpose flour, the remaining sugar, and salt. Create a well in the center, and pour in the activated yeast mixture along with the olive oil.
  3. Knead the Dough: Using your hands or a dough hook, knead the mixture until a smooth and elastic dough forms, about 5-7 minutes.
  4. Preheat and Prepare: Preheat your oven to 400°F (200°C) and grease your ramekins with baking spray.
  5. Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4-inch thickness.
  6. Assemble the Pot Pie: In each ramekin, spread 1/4 cup of pizza sauce on the bottom and layer with cheese and toppings of your choice.
  7. Cover and Bake: Place the dough rounds over the top of each ramekin, fold the edges, and cut slits in the top. Bake for 20-25 minutes.
  8. Cool and Serve: Remove from the oven and let cool for a few minutes before serving.
