  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 cup shelled pistachios, chopped
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract and lemon zest.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk.
  6. Fold in the lemon juice and chopped pistachios.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Store at room temperature in an airtight container for 3-4 days or freeze for up to 3 months.
