A delightful fudge that combines the classic flavors of pineapple upside-down cake with creamy white chocolate, perfect for any occasion.

  • 1 can (15 oz) crushed pineapple, drained
  • 1/2 cup sweetened condensed milk
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped maraschino cherries
  • 1/4 cup chopped pecans or walnuts (optional)
  • A pinch of salt

Instructions

  1. Melt the Chocolate and Butter: In a medium saucepan over low heat, combine the unsalted butter and white chocolate chips. Stir continuously until the mixture is completely smooth and creamy.
  2. Stir in the Creamy Ingredients: Once melted, add the sweetened condensed milk, vanilla extract, and a pinch of salt to the butter and chocolate mixture. Stir vigorously until everything is evenly combined and creamy.
  3. Add the Fruity Components: Gently fold in the drained crushed pineapple, chopped maraschino cherries, and the chopped nuts (if you’re choosing to use them).
  4. Pour and Spread the Mixture: Pour the mixture into a greased 8×8 inch dish and spread it evenly.
  5. Chill Until Set: Place the dish in the refrigerator for at least 240 minutes or until the fudge is fully set.
  6. Slice and Serve: Once set, remove from the fridge and cut into squares. Serve and enjoy!
