This Pineapple Upside Down Cake is a nostalgic dessert featuring caramelized pineapple and maraschino cherries atop a moist, buttery cake.

  • 1 can (20 oz) pineapple slices
  • 1/2 cup maraschino cherries
  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Drain the pineapple slices and reserve the juice.
  3. Melt the butter in a round cake pan and sprinkle brown sugar over it.
  4. Lay the pineapple slices and maraschino cherries over the sugar mixture.
  5. Mix the all-purpose flour, granulated sugar, baking powder, and salt in a bowl.
  6. Whisk together the milk, vegetable oil, vanilla extract, and eggs in another bowl.
  7. Combine the wet and dry ingredients until smooth.
  8. Pour the batter over the arranged pineapple and cherries.
  9. Bake for 40-45 minutes, or until a toothpick comes out clean.
  10. Cool for 10 minutes before inverting onto a plate.
