A nostalgic and delightful Pineapple Upside Down Cake with caramelized brown sugar, juicy pineapple, and sweet cherries.

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can pineapple slices
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup pineapple juice
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a round cake pan, melt the butter and sprinkle the brown sugar evenly on top.
  3. Carefully arrange pineapple slices over the brown sugar and place a maraschino cherry in the center of each.
  4. Mix together the all-purpose flour, granulated sugar, baking powder, and salt in a bowl.
  5. Combine the milk, pineapple juice, and eggs in another bowl and whisk together.
  6. Gradually blend the wet mixture with the dry ingredients until just combined.
  7. Pour the batter over the pineapple layer in the cake pan and bake for 30-35 minutes.
  8. Allow the cake to cool slightly before inverting it onto a serving plate.
  9. Slice and serve warm or at room temperature.

Notes

For added flavor, serve with whipped cream or vanilla ice cream. Store leftovers at room temperature for up to 3 days.
