A classic Pineapple Upside Down Cake that brings nostalgia and sweetness, with caramelized pineapple and a moist cake base.

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter and pour it into a 9-inch round cake pan.
  3. Sprinkle brown sugar evenly over the melted butter.
  4. Arrange pineapple slices on top of the brown sugar and place a cherry in the center of each slice.
  5. Mix flour, granulated sugar, baking powder, and salt in a bowl.
  6. Whisk together eggs, milk, and vanilla in another bowl.
  7. Combine wet and dry ingredients, mixing until just combined.
  8. Pour the batter over the pineapple layer in the cake pan.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool for 10 minutes before inverting onto a serving plate.

Notes
