A heartwarming Pineapple Upside Down Cake with caramelized pineapple slices and cherries atop a moist cake.

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a round cake pan.
  3. Sprinkle brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices on top of the brown sugar and place a cherry in the center of each slice.
  5. Mix together the flour, granulated sugar, salt, and baking powder in a separate bowl.
  6. Combine the milk, eggs, and vanilla extract in another bowl.
  7. Pour the wet ingredients into the dry ingredients and mix until just combined.
  8. Pour the batter over the pineapple and cherries in the pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let the cake cool for a few minutes, then invert onto a serving plate.
